Salumificio Pedrazzoli was the first company in Italy to believe in the organic production of salami; for us, this challenge was a natural vocation or better, it was the direct consequence of a constant search to reduce – and ultimately eliminate – the use of preservatives in our products, research that we have always undertaken in order to honor the secrets of our artisan production, that is typical and natural as the best pork butchery tradition require.

In 1996, in collaboration with the University of Cremona, we created our organic line “Primavera”; it was an ambitious and pioneering project aimed to reduce the use of preservatives in the production of salamis and cold cuts. We improved innovative fermentation and then free-range rearing methods, making Primavera Bio be the first organic cold cut line in Europe, which has also proved to be extremely popular.

Today, the Primavera Bio line is our flagship and – as demonstrated by the international acknowledgments gained- it also the flagship of Made in Italy products in the organic food sector.
With over 40 products, controlled and certified by the Consortium for the Control of Organic Products in Bologna, the Primavera Bio line is suitable for all consumers who are intolerant to flours, milk and gluten and more generally, is popular with the increasing number of consumers looking for great taste combined with healthy products and excellent food safety.

In 1998, during the Biofach trade fair in Nuremberg in Germany (the world’s largest platform for the organic sector), the company won the award for “ with their organic Parma ham.
